Peru still owns the cuisine crown in Latin America. Husband and wife chefs Virgílio Martínez and Pía Leonof of the Lima hotspot Central wowed judges for the second straight year with their impeccable ceviche, razor clams, and aji chili pepper to again be named the region’s top restaurant. But the country has much more to offer. Two other Lima restaurants — Astrid y Gastón and Maido — also scored a top-five finish in the annual “Latin America’s 50 Best Restaurants” list, with Santiago’s Boragó and São Paulo’s D.O.M ranking second and fourth, respectively.
